Glenn's Super Potato Pancake Recipe
Ingredients:
2 eggs
1 teaspoon salt
2 teaspoons pepper
1 teaspoon baking powder
4 tablespoons flour
1 medium-sized onion
5 large potatoes
1 hot pepper (or mild pepper, depending on your inclinations ...)
Oil.
Procedure:
AA. Preheat oven to 220
A. Whisk eggs, salt, pepper, baking powder, and flour in a large bowl.
B. Shred (with food processing shredding blade, ideally) the onions,
pepper, and potatoes.
C. Fold the potatoes into the egg/dry-ingredient mixture --
D. heat up about 3 tablespoons of oil (start low/medium) in large skillet
E. Put about 1/4 cup of the mixture in a ball onto the oil -- flatten
it ... that'll be one potato pancake ... put on as many as fit
F. Raise temp of skillet to medium/high
G. Flip as needed (after about 3-4 minutes, typically)
H. Place finished pancakes onto plate with paper towel.
I. Cook them all!
J. When done, either serve them immediately or put on tin foil on cookie
sheet and put in oven until ready.
Feeds 3-5 -- serve with honey, apple sauce, and/or sour cream.
